No pasta Zucchini/Sqaush Lasagna.. Thanks Adrian Perry for sharing!!!!

Zucchini/squash lasagna (no pasta)
1 white onion diced 1lb of meat of your choice...I used sausage 2 15 oz cans of diced organic tomatoes 3 Tablespoons of tomato paste 3 Tablespoons of Italian seasoning Fresh basil Fresh oregano Fresh rosemary 1 Teaspoon of sea salt 1/2 teaspoon of ground pepper 2 cloves of garlic crushed 1 lb of zucchini and squash 1 cup of raw goat cheese 2 cups Greek yogurt 1 head of broccoli 1 egg 1 tablespoon of coconut oil Fresh mozzarella for topping
Cook the onions in a large skillet/sauce pan in the coconut oil until lightly browned then add your meat and cook. Add the tomatoes, tomato paste, spices and fresh herbs, salt and pepper, and garlic to the meat....cook until heated. Slice your squash and zucchini in little round circles and set aside. In a mixing bowl mix your egg, 2 cups of Greek yogurt, 1 head of broccoli finely chopped, and 1/2 cup of goat cheese set aside. Get a baking dish and lightly grease the bottom. Now it's time to start layering. Start with a nice even layer of your squash and zucchini to cover the bottom then layer with your meat mixture and then layer with your yogurt/ goat cheese mixture with spoon size dollops on top of your meat mixture . Repeat until you are finished. Top with more fresh goat cheese and a little fresh mozzarella if you would like! Bake on 375 for 45-60 minutes.
