Our very own Boot Camp Mom Jennifer Peters Shared this recipce. It is too die for and the kids will love it. I made 4 loafs to bring on my beach trip.
***mine made 3 mini loaves or one reg loaf---you may want to double
2 cups of blanched almond flour
1/2 teaspoon of sea salt
1/2 teaspoon of baking soda
1 teaspoon of ground cinnamon
1/4 teaspoon of ground nutmeg
1/4 cup of coconut oil (TJs)
1/2 cup of honey
2 large eggs
1 1/2 cups of grated zucchini (with green peel; not packed; ***if wet, dry off with a paper or cloth towel)
Preheat your oven to 350°
Grease your baking pan
Combine the almond flour, salt, baking soda, and spices and blend well.
Add the remaining ingredients and blend well.
Pour the batter into your baking pan, and bake for about 60 minutes or until a toothpick inserted in the center of the bread comes out clean. (my mini loaves took less time!!!)
Cool and slice.
Makes 1 loaf
