Healthy Side dishes for Dinner.. Roasted Broccoli?


Two great side dishes. I admit I am picky, but these side dishes rocked. The nutritionist at my work told me about roasting broccoli, I would have never tried it until she spoke of it. It was amazing. Everyone should try this. The kale salad is sooo good for you and this dressing makes it great.














  • Pre-heat oven to 425 degrees F.
  • Cut the broccoli florets into bite-sized pieces. Cut the stalks into 1/8" thick round slices. Place the broccoli into a mixing bowl and toss with the EVOO, garlic, salt and pepper; set aside.
  • Spread the Panko into a 13"X9" metal cake pan and place into the oven for 2 minutes or until lightly toasted. Remove the Panko from the oven and place into the same bowl as the broccoli mixture. Toss to combine. Return the mixture to the cake pan, place in the oven and roast just until the broccoli is tender, about 8-10 minutes.
  • Remove from the oven, toss with the cheese and serve immediately.


Kale Salad
Ingredients
Salad
  • 1/2 cup pecans
  • 8 ounces kale (I used regular curly green kale)
  • 1/2 cup dried cranberries (or cherries)
  • 1 medium Granny Smith apple
  • 2 ounces soft goat cheese, chilled
Dressing
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons apple cider vinegar (or white wine vinegar)
  • 1 tablespoon smooth Dijon mustard
  • 1 1/2 teaspoons honey
  • Sea salt and freshly ground pepper, to taste
